this is a chunky and creamy salad. great for picnics
- 1 lb potato
- 1⁄2 cup cider vinegar
- 1⁄2 cup red onion
- 1⁄2 cup plain fat-free yogurt
- 1 teaspoon Dijon mustard
- 1⁄4 cup parsley
- 2 teaspoons cilantro
- 1⁄4 teaspoon pepper
- 1 cup cherry tomatoes
- Fill the bottom of a steamer with water and bring to a boil.
- Place the potatoes inside the basket, cover and steam for about 10 min until tender. Cool for 5 min and cut into chunks.
- Combine the yogurt and the rest of ingredients. Put in the fridge for a few hours until chilled.
