  • Drain and rinse beans.
  • Mash lightly in a bowl.
  • Add remaining ingredients except tortillas.
  • Mix well.
  • Let sit for at least 30 minute.
  • Serve on whole wheat tortillas with alfalfa sprouts or shredded lettuce. Add cheddar or Monteray Jack cheese if desired.
