  1. Peel carrots and cut evenly into coins.
  2. Combine carrots, butter, honey and ½ cup water in a large skillet over medium heat.
  3. Bring to a simmer and cook until the carrots are tender and most of the liquid has reduced to a glaze, 10-15 minutes.
  4. Season to taste with salt and pepper. Sprinkle mint on carrots and toss well before serving.
