- 3 cups quick oats
- 1⁄2 cup whole wheat flour
- 1⁄2 cup flax seed (ground for more nutrition or whole for more texture)
- 1⁄2 cup chopped walnuts
- 1⁄2 cup chopped almonds
- 1 cup chopped dates
- 1 egg
- 1 cup brown sugar
- 1⁄3 cup honey or 1/3 cup molasses
- 1 cup butter
directions
- Preheat oven to 325 and take egg and butter out from fridge.
- Combine oats, flour, flaxseed, nuts, and dates in a large bowl.
- Beat egg and add. Mix thoroughly.
- Melt butter, sugar, and honey in saucepan over low heat. Allow to cool a bit, then add slowly to ingredients in other bowl while mixing thoroughly.
- Fill mini muffin tins, smashing down just below surface level with back of spoon so they're tightly compacted.
- Bake 9-12 min until browned and chewy.
