Hercules' Soup

ingredients
- 1 lb ground sausage
- 3 stalks celery
- 1 small onion, sliced
- 2 cups of sliced cabbage
- 1 baking potato
- 1 turnip
- cannileni beans
- frozen spinach
- 1 cup tortellini
- 2 (14 1/2 ounce) cans chopped tomatoes with juice
- 3 1⁄2 cups chicken broth
directions
- Brown the sausage in a dutch oven, stirring frequently to prevent burning.
- Take the sausage out with a slotted spoon.
- Sautee the cabbage, onion and celery in the grease from the sausage. About 15 minutes, until cooked down.
- Add the potato, turnip, tomatoes, chicken broth and sausage.
- Bring to a boil and let simmer for 20-30 minutes.
- Add cooked tortillini and simmer for another 10-15 mintues.
- Once tortillini and potatoes are soft and ready to eat, serve in bowls and top with cheese.

<p>I love to cook! But I don't do the weekday cooking, that is done by my awesome wife. I cook on the weekends and especially on our 'cheat day'- meaning every Sunday as we adapt to this low carb life. We have been doing this for a while and we really love to get those heart-stopping, brain-freezing receipes that low carbers crave throught the week. </p>
