Herb's Beef Steak-Potato Scallop

- 1 lb round steak, 1-inch thick
- 3 tablespoons flour
- 3 tablespoons shortening
- 3 onions, small thinly sliced
- 3 tablespoons flour
- 1 1⁄2 teaspoons salt
- 1⁄4 teaspoon pepper
- 1⁄8 teaspoon thyme
- 1⁄8 teaspoon garlic salt
- 2 cups water
- 3 medium potatoes, pared & thinly sliced
- 1⁄8 teaspoon salt
- 1⁄8 teaspoon paprika
directions
- Heat oven to 350 degrees.
- Cut meat into 1" cubes.
- Coat with flour.
- Melt shortning in skillet.
- Brown Meat.
- Add Onion.
- Cook & stir until onion tender.
- Pour into ungreased 2 Qt casserole.
- Sprinkle with 3 tbs flour, salt pepper, thyme and garlic salt.
- Pour water over mixture, cover casserole.
- Bake 45-60 minutes until meat is tender.
- Increase oven temp to 450 degrees.
- arrange potatoes on meat.
- Sprinkle salt & paprika.
- Bake uncovered about 30 minutes till potatoes are tenter.
