- 29.58 ml olive oil
- 29.58 ml butter
- 226.79 g hot Italian sausage (crumbled or sliced)
- 1 large onion
- 2 garlic cloves
- 118.29 ml celery, chopped
- 118.29 ml carrot, chopped
- 118.29 ml green pepper, chopped
- 29.58 ml fresh parsley, chopped
- 2.46 ml dried basil
- 1.23 ml dried thyme
- 1 bay leaf
- salt
- pepper
- 473.18 ml tomatoes, chopped
- 946.36 ml chicken stock
- 473.18 ml zucchini, sliced
- 236.59 ml kidney bean, cooked
- 118.29 ml elbow macaroni (or other pasta)
- 1.23 ml hot chili flakes
- 118.29 ml parmesan cheese, grated (to garnish)
directions
- In a large heavy saucepan, heat oil and butter.
- Add sausage and brown lightly.
- Add onion, garlic, celery, carrot and green pepper. Cook until softened but not browned.
- Stir in zucchini, parsley, basil, thyme, chili flakes, bay leaf and a little salt and pepper.
- Stir in tomatoes and stock. Bring to a boil.
- Reduce heat, cover and simmer for 30 minutes.
- Add beans and pasta. Cover and simmer for another 30 minutes. If too thick, dilute with water to desired consistency.
- Serve with Parmeson sprinkled on top (optional).
