Heart Shaped Whole-Wheat Pancakes With Strawberry Sauce

  • Preheat oven to 200°F Preheat a large nonstick griddle or skillet over a medium-low flame.
  • In a medium bowl, whisk together the dry ingredients (flour through salt).
  • In another medium bowl, beat together the eggs, buttermilk, non-fat milk, honey and vanilla.
  • Stir the wet ingredients into the dry ingredients, mixing only enough to combine them. The batter will be somewhat lumpy.
  • Use a 1/3 cup measuring cup to ladle the batter onto the griddle or skillet. Flip the pancake when the top is bubbling and it is golden brown on the bottom. Then cook until the other side is golden brown. Hold on an oven proof plate in the oven until the entire batch is ready.
  • Strawberry sauce:

  • Puree strawberries in food processor to a chunky puree. Heat them in a small saucepan over a low flame, until they are just warm. Stir in lemon juice and maple syrup.
  • When all the pancakes are ready, cut them into heart shapes with a heart shaped cookie cutter.
  • Ladle about 1/3 cup of the strawberry sauce onto each plate, place pancakes on top and sprinkle with confectioners' sugar, if using.

  1. YUM!!! YUM!!! I made these wonderful, healthful pancakes this morning because I had a bunch of fresh strawberries left over. These were so good!! I have this cookbook too, but I have never tried this recipe. Thanks for posting it. Terrific. I also wanted to mention that if you use verynice sweet strawberries, you don't even need to add the maple syrup if you want to cut back your sugar. But the maple syrup makes it extra good for a splurge. I also recommend leaving out cool whip because it is gross hydrogenated oil...YUK!
     
  2. I got this exact recipe from the cookbook The Food You Crave, with one difference -- 3/4 cup nonfat milk. I think I'd like it with 1/2 cup better because the batter was quite thin. The taste was really good though. We had it with fat free spray whipped cream on top because the sauce was a bit sour. My 10-year-old loved this!
     
  3. I made heart shaped scrambled eggs to go with the heart shaped pancakes for Valentines Day and it was a hit with my family. They all felt the strawberry sauce was a bit sour but strawberries aren't in season right now.

I loved how these were half wholewheat and half white - I bake all the time and go straight for white flour, but this made me stop and think about maybe adding in a little more whole wheat to my life! They had a lovely earthy flavour and the heart shape is a really cute touch. The sauce was to die for - so fresh and sweet - I did add in the maple syrup as strawberries aren't too sweet here at the moment! It added a lovely flavour to the sauce :)
     
  5. I thought the heart shaped idea was great! It made a pretty presentation. For the syrup, I used the recipe from recipe# 189365, which is basically like this one with a few small differences. My husband thought the pancakes were fantastic. Goodness, though--they are THICK so make sure they are cooked all the way through! But it's well worth the effort :-). Thank u for sharing!!

  1. Awesome and healthy pancakes! Texture was perfect, the were light fluffy and very filling. I used agave nectar instead of the maple syrup. My kids loved them as well.
