Healthy Gluten and Dairy Free Chocolate Chip Cookies/Bars

ingredients
- 1 cup oat flour or 1 cup millet flour
- 1⁄2 cup coconut flour
- 1 cup almond meal
- 3⁄4 cup almond milk
- 1⁄2 cup sunflower seed butter
- 1⁄8 teaspoon xanthan gum
- 1⁄4 cup honey
- 1⁄2 cup chocolate chips
directions
- Mix all ingredients well. If mixture is too dry/clumpy add a little extra almond milk. Form into 1 inch balls, and press surface lightly with fork to flatten a little.
- Cook at 350 for 14 to 16 minutes.
- Cookies will not rise or enlarge much in size, and they will be dense - more like an energy bar consistency.
- I've also made this as true bars - just press into a pan, bake about 20 min and cut into rectangles.
- The recipe works fine with regular flour, and you may substitute any type of nut butter. We just happen to be a gluten-free household, and I like the flavor of the coconut flour in the cookies.
