ingredients
- 1 1⁄2 lbs ground beef
- 1 garlic clove, minced
- 2 cups macaroni, uncooked
- 1 teaspoon salt (optional)
- 2 (10 1/2 ounce) cans condensed tomato soup with roasted garlic and herbs, undiluted (Campbell's has this brand)
- 2 1⁄2 cups water
- 2 cups frozen mixed vegetables
directions
- In large skillet, brown beef and garlic; drain.
- Add the rest of the ingredients.
- Bring to boil.
- Reduce heat and simmer uncovered for 30 minutes.

This was very good! I was disappointed that I didn't have the garlic and herb tomato soup to use, so instead I "invented" by own version by using regular tomato soup and adding a little garlic powder and a random herb or so. I don't think that I added enough of those two to make a difference, but that is ok! It was still very good! I used mini lasagna noodles (cooked them in water for a minute or so to get them going-which make it so a whole 2 1/4 cups of water was not necessary, probably 1 3/4...) Also, I added a little more veggies because I can never get enough of them! What I made served 6 people perfectly. I love it how it was so easy and colorful! Perhaps the beef could be substituted by chicken? Maybe! Well, I am glad I made it and I am sure I will again in the future! Thanks!

My family really enjoyed this recipe and I loved how quick & easy it was on a busy weeknight! Since the canned soup wasn't available, I didn't see a reason to downgrade for that. I had one can of plain tomato soup, so I used that and one can of diced tomatoes. I spiced those up with 1/2 teaspoon celery salt, 1 Tablespoon Italian seasoning & 1 Tablespoon chili powder. Other than that, made as directed. We thought it was delicious and because of the vegetables, it was a one-pot meal. We enjoyed this dish with fresh grated Parmesan & some saltine crackers. I really needed a quick, ground beef recipe last night & you came to the rescue! Thanks for sharing, Char! :) Made & enjoyed for BB tag game.
