Mexican Ground Beef Quinoa Skillet

This is an easy weeknight meal my family enjoys. If you like it spicer, you can add tomatoes with chilis.

Using the suggestions by other reviewers, I felt comfortable making some changes. I used leftover quinoa from another recipe so I didn't add as much water as the recipe listed. I also added a small can of rotel style tomatoes and a can of green chilis. Ground turkey was my protein. I also added a package of taco seasoning with the cumin. This is wonderful! It was fast to prepare, the flavor was great, and it makes very good leftovers.Reply

This worked well for me as a quick side dish with taquitos. I desperately needed a quick extra item that was tasty and this was just great. I had all the ingredients needed in the house without needing to run to the store. Since no one had ever heard of a Mexican Quinoa it was an excellent topic of conversation on how I could have been so creative. Thank You!Reply

Delicious!! I made this for dinner tonight. Made exactly as written except i also added a couple dashes of garlic powder. Don't even know that it made a huge difference. I also noticed that the ingredients list doesn't mention chilies, but the directions do, so I just added a can of chopped green chilies. Hubby and I loved it and ate it topped with sour cream, cheese and salsa! Hubby added crushed red pepper to his too cause he likes things spicy. Tomorrow with the leftovers I'll wrap it in a tortilla for lunch! Overall a good easy recipe :)Reply
