Halloumi and Sprout Salad

Cheese
- 4 slices halloumi cheese (1 inch thick)
- 1⁄2 lemon, juice and zest of
- flour
- salt and pepper
- olive oil

Salad
- 1 cup mixed sprouts
- 2 links Cajun-style sausage (spicy preffered)
- 1 shallot (fine chop)
- 1 potato (1 cm cubes)
- garlic (fine chop)
- 1 cup chicken stock
- 1 tablespoon Italian dressing
- salt and pepper
- 1 tablespoon olive oil
directions
- heat oil in medium sauce pan.
- remove casings from sausage and add to pan.
- sautee while "crushing" with the back of a wooden spoon, about 5 minutes.
- add shallots and garlic, cook until fragrant, aprox 1 minute.
- deglaze the pan with chicken stock.
- add potatoes and sprouts and season to taste.
- reduce heat and allow to simmer uncovered until most of the liquid is gone (aprox 20-30 minutes, adding more liquid if potatoes are not fully cooked).
- add italian dressing at the last moment and just heat through.
- in small mixing bowl add flour, lemon zest, salt and pepper and set aside.
- in another small sauce pan, heat oil over medium high heat.
- dredge haloomi slices in flour mixture and add to pan.
- sautee cheese (2 minutes per side or until golden brown and slightly soft).
- add lemon juice.
- spoon 4 mounds of sprout mixture on the centre of 4 plates.
- using a spatula, place cheese on top of each mound.
- serve and wait for the ooohhhs and aaahhhhs.
