Half-Fat Spiced Oatmeal-Nut Cookies

"I needed a tasty, semi-healthy cookie recipe to indulge in while pregnant (so no artificial sugar or chocolate), and after a little tinkering: voila! They are more like biscotti than cookies, meaning it is probably best to cook them a minute or two longer so they'll be crisper and better for dunking in milk! Also, if preferred, you can 1) increase the quantity of nuts to 1 cup, 2) add 1 cup of chocolate chips, or 3) add one cup of raisins"

  • Heat oven to 350 degrees F.
  • Beat butter and sugar.
  • Add egg whites and vanilla and mix well.
  • Add flour, baking soda, and spices, and beat well.
  • Stir in oats and pecans.
  • Drop by rounded tablespoonful onto ungreased cookie sheet.
  • Bake 10-12 minutes, up to 15 or 17 and they'll still be okay.
  • Cool on wire rack.
