A great way to use the tomatoes from the garden. This sauce is light and sweet.

Directions

  1. In large bowl crush 28 oz of fresh tomatoes with a "meat" mallet until they are a consistency you like (I like mine chunky).
  2. In a 4-quart pot heat oil.
  3. Add crushed garlic and chopped onion, Sauté.
  4. Add tomatoes, bring to a low boil.
  5. Crush up basil an add with all remaining ingredients.
  6. Cook for 30-40 minutes over med-high heat; stir occasionally.

Simple & delicious. I squashed up the tomatoes right in the pan instead of dirtying up another bowl. Worked great. Thank you for a fabulous recipe!
