Grilled Cajun Chicken

- 2 cups vegetable oil
- 2 tablespoons cajun seasoning
- 2 tablespoons italian seasoning
- 2 tablespoons lemon pepper
- garlic powder, to taste
- 10 boneless skinless chicken breast halves
directions
- Place chicken between parchment paper, plastic wrap or waxed paper and pound to 1/2" thick.
- Combine the oil and spices in either a sealable plastic bag or a large shallow dish.
- Add the chicken breasts and marinade for at least 1/2 hour in refrigerator.
- Preheat grill.
- Lightly oil grill grates.
- Drain chicken discarding marinade. Place chicken on hot grill and cook for 6 to 8 minutes on each side, or until juices run clear.

Loved the combination of spices in this. I especially liked the lemon pepper that seemed to have really come out in this. I only used 3 chicken breasts for the two of us and cut the oil way down to 1/2 cup with 1 tablespoons each of the seasonings and it worked perfectly for us. Plan to use one of the breast on pizza tonight. Thanks Mary K.W.

I'm a grandmother who loves having the grandkids around. My son is currently living with me (on a short term basis) so I get to see and spend time with his kids more than I ever had, and that's a great thing.
