ingredients
- 1 cucumber
- 1 celery
- 1 jalapeno pepper
- 1 garlic clove
- 1⁄2 cup cilantro
- 1⁄2 cup parsley
- 1 avocado
- 2 tablespoons lime juice
- 1⁄4 cup Greek yogurt
- 1⁄4 cup toasted pumpkin seeds
- 1 cup frozen spinach (thawed)
- 2 cups water
- 1 teaspoon olive oil
- 1 teaspoon kosher salt
directions
- Add all ingredients to blender and process until very smooth.
- Divide among four bowls. Garnish with Greek yogurt, pumpkin seeds, and Greek yogurt.
