- 1 lb pork tenderloin, boneless
- 1⁄2 medium onion, cut into wedges
- 1⁄2 green bell pepper, diced
- 1 (14 1/2 ounce) can diced tomatoes
- 1⁄2 teaspoon dried oregano
- 1⁄2 teaspoon salt
- 1⁄4 teaspoon pepper
- 1⁄2 teaspoon ground cinnamon
- 2 ounces feta cheese
directions
- Trim fat from pork. Cut into 1/2 inch pieces.
- In a large nonstick pan sprayed with cooking spray, brown pork,peppers, and onion, Drain off any fat.
- Stir in tomatoes, oregano, salt, pepper, and cinnamon. Bring to a boil. Reduce heat, cover and simmer for 25 minutes
- sprinkle feta over pork and Serve immediately.
