I found this recipe at http://seasonalontariofood.blogspot.com and tweaked it a little. You can use any type of greens such as spinach, kale, chard etc. I used spinach and that is reflected in the recipe. You can also substitute canned diced tomatoes for the fresh ones.
- Saute the onions and garlic in oil in a large pot.
- Add the chickpeas and tomatoes.
- Season with chili flakes, paprika, and oregano and let simmer for about 5 minute.
- Add the spinach and wine and cook until the spinach is wilted. Then add the lemon juice.
- Serve over orzo.
