    Ingredients:

    Directions:

      In a skillet, cook ground beef, onion, and green peppers over medium heat until done, drain.
    2. 2
      Stir in rice, tomato, corn, olives, bacon, chilli powder, garlic, and salt.
    3. 3
      Bring to a boil; remove from heat.
    4. 4
      Add 1 cup of the cheese; stir to melt.
    5. 5
      Transfer to a 11x7x2 baking dish.
    6. 6
      Sprinkle with remaining 1/2 cup cheese.

      Toss bread crumbs with melted butter & sprinkle over top of cheese.

      Bake uncovered in a 350 deg oven for 15-20 minute.

      You can also at step 5 transfer to a crock pot follow steps 6 & 7 and then cook in the crock pot for 2 hours on low.

      June 16,2010 I cooked this for supper, tonight,& my entire family raved how good it is. I will be cooking this maybe ,twice a month, because,not everyone in my family ever like the same food; this is a winner, & it deserves 5 stars.
