Grandma's Raisin Bars

FILLING
- 2 cups raisins
- 1 cup sugar
- 1 teaspoon cornstarch
- 1 cup cold water
- 1⁄2 cup apple cider

DOUGH
- 2 1⁄2 cups flour
- 1 1⁄4 teaspoons baking soda
- 1 1⁄2 teaspoons salt
- 1 1⁄2 cups shortening
- 1 1⁄4 cups brown sugar
- 1 egg
- 1 1⁄4 teaspoons vanilla
- 2 1⁄2 cups oatmeal
directions
- Preheat oven to 350F and line a 9x15 pan with parchment.
- Filling:.
- Chop sugar and raisins in a food processor.
- Whisk cornstarch in water.
- Add cider.
- Add raisin mixture and mix well.
- Simmer 5 minutes.
- Cool.
- Dough:.
- Mix flour, baking soda and salt.
- Cream shortening and add brown sugar.
- Beat in egg and vanilla.
- Add flour mixture.
- Beat in oats.
- Spread half in pan.
- Top with Filling.
- Spread remaining crumbs on top.
- Bake 30 mins.
- Cool and cut into bars.
