  • Cook sugar, light corn syrup, milk, butter, chocolate or cocoa, and salt over low heat until melted, stirring constantly. Bring rapidly to a boil; boil 1 minute or to 220 degrees (F). Remove from heat and beat gently until slightly cool. Add vanilla. Continue beating until of spreading consistency.
  • **You have to put this on the cake while it's still a sort of liquid. It will not be firm like buttercream. This was my grandmother's recipe and I watched her sort of pour it on a layer, then spread, playce the next layers. On the top, you pour and then spread as it cools. It's a tricky one to pull off.

  1. I wasn't really sold on this recipe... it looked delicious on paper, but it wasn't quite chocolatey enough for me, and it didn't work at all to frost a layer cake. I partly blame myself, because I know that boiled icings usually turn glossy and malleable as they cool... but this frosting only wanted to stick to itself, and not the cake. It kept peeling off the side in sheets when I attempted to spread it, so I had to resort to scraping it off the spatula against the edge of the cake, and hoping it stayed there. I guess the cake turned out looking kind of artsy, but not what I'd call pretty! Still, I think I'd have had more luck with this if I'd frosted the cake while the icing were still slightly warm, and it would probably be great for frosting the top of a sheet cake. But maybe add an extra ounce of chocolate if you try it?
