  • Combine first 8 ingredients in large bowl; add remaining ingredients and whisk until mixture is blended but small lumps remain; stir in 1 cup apple sauce.
  • Preheat oven to 250F; melt ½ tblsp butter in large skillet over medium-low heat; pour batter by 1/3 cupfuls into skillet.
  • Cook pancakes until bottoms are golden-brown and bubbles form on top, about 2 minutes; turn pancakes over; cook until bottoms are golden-brown, about 2 minutes; transfer to baking sheet as they are done to keep warm.
  • Repeat, using more butter as necessary.

  1. Very yummy pancakes with a great list of ingredients. I really enjoyed the texture and flavour of these. I used all whole wheat flour. These are even great made the night before, stored in the fridge, then heated in the microwave in the morning. Thanks for a great pancake! Reviewed during ZWT 4.
     
  2. Keeper recipe! I mixed these up the night before cooking them and made them up for a late breakfast at 10am and they were delicious and filling. I had three pancakes, my hubby had 4 and we each had a couple eggs. We both went on with our busy day filled with lots of physical work. These pancakes lasted us the entire day until we at at 7pm! Talk about staying power! I made the whole batch and plan to freeze the leftovers to have on hand for a quick breakfast. Thanks for sharing the recipe.

I moved out here many, many years ago from Ottawa, Canada - so I am blessed in having two wonderful heritages! I suffer from compulsive obsessive behaviour with regard to food and my psychiatrist thought it would be a good idea to find a 'society' where many have the same problem and try to find a cure. So far, I've copied a couple of thousand recipes from this site and my psychiatrist has thrown the towel in and refuses to answer the phone when I call. What did I do wrong? Got 3 kids that keep me on the go - 10 and under at this point (2008) - I may not get round to updating this for a few years, so you'll have to do your own maths. I teach English full-time and Greek Cookery part-time. I would like to make the cooking part of it full-time and the English Grammar part of it part-time. That's all for now.
