Gingerbread Pancakes

"When my husband and I were newly wed he would take me to the Omelettry in Austin, TX on a Saturday morning. The resturant always had a huge waiting list and these pancakes were the reason! I got this recipe from a copycat recipe site so I'm hoping they are as good as the originals!"

  • Cream eggs and brown sugar together.
  • Add buttermilk, water, and coffee.
  • In separate container, sift together dry ingredients.
  • Then combine first and second mixture and add melted butter.
  • Cook on griddle as you would any other pancake, serve with maple syrup, honey, or molasses.

Finally got around to making this, come together easy and LOVE the spices and flavors, when I first saw a full tablespoon of some of the spices I was a little worried but shouldn't have been - it was perfect. Followed the directions except for one small change - added chopped pecans to the batter and I think it just made it even better. Great fall breakfast

Where to begin? I always have a hard time not sounding like a broken record on "about me" sections. I am a mom to three wonderful children. I am a mom to three kiddos, have a wonderful fiance, and we love to cook! ?My children have been taught at a very early age how to cook and we take turns cooking for the family. I absolutely love recipezarr.com (now food.com) because I can get on here and search for simple recipes for the younger children and more advanced recipes for the older kids (including my oldest kid...my boyfriend!). Usually once a month on a weekend we have what we call "around the world" night. I cook authentic (at least as close to as possible) dishes from another country. We all enjoy this and it's a family tradition. Another thing we do monthly that is a family tradition is our "family movie night". We make finger foods and watch movies as an entire family. It's not uncommon to see 3 or 4 types of homemade buffalo wings and sauces, meatballs, and homemade dips for veggies on the table on movie night. I LOVE that recipezaar meets my needs for all of our "family traditions"!!!!
