  • 2 lbs unpeeled red potatoes, quartered
  • 3 cloves garlic
  • 12 cup butter, melted
  • 14 cup grated parmesan cheese
  • 1 teaspoon italian seasoning or 1 teaspoon oregano, if preferred

directions

  • Boil potatoes in salted water with peeled garlic cloves until tender.
  • Drain and stir in butter, cheese and Italian seasoning.
  • Mash with potato masher.
  • Taste and adjust seasoning for salt, if necessary.

  5. Made these to go with pork chops. Very good. While I have cooked garlic in mashed potatoes for years, I don't think I have ever tried the combination of Italian seasoning and parmesan cheese. I did reduce the amount of butter because of the fat content and added some warmed non-fat milk.
