Garlic Salmon Linguine

  • Cook the linguine according to package directions.
  • Meanwhile, in a large skillet, saute garlic in oil.
  • Stir in the salmon, broth, parsley, salt and cayenne.
  • Cook until heated through.
  • Drain linguine.
  • Add to the salmon mixture and toss to coat.

I like easy, easy, EASY, quick, and did I say *easy* recipes??? My cooking goals this year have focused on using more white meat instead of red meat, using fish at least twice a week, substituting whole wheat pasta for regular, making more vegetarian dishes, all with recipes that take about 20 minutes to cook - if it takes too long, i'm not really interested in the trouble, unless company is coming over!
