Wonderful for sandwiches and salads. Cheaper and healthier than store bought. The whey is optional but will cause it to last longer in the fridge.
- 1 whole egg
- 1 minced garlic clove
- 1 teaspoon Dijon mustard
- 1 1⁄2 tablespoons fresh lemon juice
- 1 tablespoon whey (optional)
- 3⁄4-1 cup olive oil
- Place all ingredients in a pint size glass jar and whip with an immersion blender for about 30 seconds.
- Place the lid on the jar and refrigerate for 24 hours before use.
