    • 1 whole egg
    • 3 egg whites
    • 1/2 cup chopped spinach
    • 1/2 cup chopped fresh tomato
    • 1/2 cup sliced mushrooms
    • 1/4 teaspoon garlic
    • salt and pepper

    Directions:

    1. 1
      Spray pan with olive oil flavored cooking spray. Brown garlic. Add all ingredients and cook on medium heat until eggs are firm. Add parmesan or salsa if desired.
