Frozen Snicker Pie

"This is a staple in your freezer if you are on a low-sugar diet. It is a favorite of all First Place Members. It taste like a frozen Snicker candy bar. Really simple to make and it only takes minutes to prepare."

  • Using a large mixing bowl let the ice cream soften, with an electric mixer mix in the dry pudding mix and peanut butter.
  • With a spatula fold in the Cool Whip Lite. Pour into the pie crust.
  • Cover the pie with plastic wrap or the dome cover included with the pie crust and place in the freezer for at least two hours.
  • Remove from freezer 10 minutes before serving. This can be refrozen.
  • Diabetic Exchanges: 1/2 meat, 1 1/2 starch, 1 fat.

  1. I used 1 qt box of ice-cream (by accident), so I compromised and made 2 pies. I did not use extra ingredient and it still tasted wonderful. I used Lite Cool Whip, chopped snickers bar and drizzled some lite Choc Syrup on as a topping. OMG this pie was amazing; I forwarded it to all my diabetic friends and family!!!
     
  2. This is GREAT. I made the filling and put it into glasses and sprinkled some plain graham cracker crumbs on top because I didn't want the added calories and fat from the crust. I used smooth "natural" peanut butter. The result is truly yummy and it looks marvelous in the frosty glasses. This recipe is being saved forever in my Diabetic Pleasures cookbook. Made for PAC, Spring'08. :D

I am semi-retired (I think), God hasn't let me know for sure. I have been in the real estate field for 15 years and recently turned in my license. I am an avid reader and belong to a book club at our church. We have been nicknamed "The Fluff Club" because we don't like to read really heavy duty books. We stay more with the fiction christian best sellers. I also cook a lot and I am in the process of writing a cookbook for low-sugar diets. I am a member of First Place (a Bible based weight loss program). My favorite cookbook is the one I am writing. I am taking all of my vast collection of recipes re-vamping them to low-fat and low sugar recipes. Did I mention that cooking is my passion. I have cooked on Wednesday night's for our church dinners, catered many events for local businesses and this summer I will be the cook for a mission trip to an Indian reservation in Nebraska. My other passion is my family: my husband and I have two grown sons, one daughter-in-love, one granddaughter and one grandson (born on Christmas Day 2005, we never did get to eat dinner that day and he is worth it). My pet peeve is: people who show disrespect to their spouses by calling them "my old lady or my old man". If this happens in my presence my husband has learned to step between me and the person speaking.
