- 1⁄4 cup bacon drippings
- 1 medium onion, diced
- 1 medium green bell pepper, seeded and diced
- 1 medium red bell pepper, seeded and diced
- 4 cups corn kernels, cut from about 8 ears
- 4 plum tomatoes, seeded and chopped
- salt and pepper
directions
- Melt the bacon drippings in a medium skillet. Add the onion and peppers and cook until the onion is translucent and soft, stirring frequently. Add the corn, tomatoes, salt and pepper. Cover and cook over low heat, about 6-8 minutes.
