Fried Corn and Sweet Peppers

"This recipe tastes best with the bacon drippings, of course. I always fry up bacon and crumble into a nice large side salad when I make this recipe. If you don't want to use bacon then butter or margarine can be substituted."

  • Melt the bacon drippings in a medium skillet. Add the onion and peppers and cook until the onion is translucent and soft, stirring frequently. Add the corn, tomatoes, salt and pepper. Cover and cook over low heat, about 6-8 minutes.
