- 1 (22 ounce) can mandarin oranges, draind
- 1 (27 ounce) can pineapple chunks, draind
- 1 cup pineapple, juice of
- 3 cups miniature marshmallows
- 4 cups sour cream
- 7 ounces flaked coconut
- grapes or cherries
directions
- Combine all ingredients except garnish, and chill several hours or overnight.
- Serve on lettuce cups garnished with grapes or cherries.

This is truly fantastic! I wish the name was more descriptive - like "Awesome Ambrosia". This is very easy to prepare ahead of time. I blended the juice and sour cream first, then added the drained fruit and refrigerated it overnight. I measured out the coconut and marshmallows to add in the morning. ( I made this for a brunch.) I also added about 1 cup of lightly toasted macadamia nuts along with the coconut and marshmallows. I wanted to add the cherries but they were out of season so I used grapes instead. Still delicious. Everyone at the brunch LOVED this dish and I will make it again and often.

I love this salad but we make it as 1 cup of each +1 cup of nuts. It is a favorite at our extended family xmas party---pot luck. It comes out good every time, has a long sit life and always tastes the same. Young and old and inbetween all seem to like it. It is a 5 star recipe because you can make it the day before--it is even better---then sit it out and it stays as good for the last person as it was for the first. thanks for sharing, I forgot to write....add the pineapple juice at the end a little at a time you may onoy need 1/4...it is easier to add more than to have fruit juice soup
