Great for a romantic dessert or special occasion. The figs can be cooked 1 day in advance.
- Combine water, sugar and lemon juice in a saucepan.
- Stir constantly over heat, without boiling, until sugar is dissolved.
- Add figs and bring to a boil.
- Reduce heat, simmer, uncovered, for 3 minutes or until tender.
- remove from heat, cool.
- Serve figs topped with 1/4 cup of syrup and top with champagne.
