  • Combine water, sugar and lemon juice in a saucepan.
  • Stir constantly over heat, without boiling, until sugar is dissolved.
  • Add figs and bring to a boil.
  • Reduce heat, simmer, uncovered, for 3 minutes or until tender.
  • remove from heat, cool.
  • Serve figs topped with 1/4 cup of syrup and top with champagne.
