Fiesta Bean Dip

"Colorful dip - serve with tortillas and grilled chicken or tortilla chips"

• Serves: 10-12

ingredients

• 1 (15 ounce) can black beans
• 1 (15 ounce) can red beans
• 1 (15 ounce) can pinto beans
• 1 (15 ounce) can black-eyed peas
• 1 (15 ounce) can garbanzo beans (optional)
• 1 large sweet pepper, chopped (green, yellow, orange)
• 1 large red onion
• 1 (12 -16 ounce) package frozen corn kernels
• 1 jalapeno pepper, chopped (no seeds)
• 4 roma tomatoes, chopped
• 1⁄4 cup fresh parsley or 1/4 cup fresh cilantro, chopped
• 4 limes, juice of
• 10 -20 drops Tabasco sauce
• salt, to taste

directions

1. Stir fry or broil the corn.
2. Combine all ingredients and chill before serving.
