Fiber-Tastic Peanut Butter Oatmeal Cookies

- 236.59 ml rolled oats
- 118.29 ml bran buds
- 44.37 ml butter, melted and browned
- 118.29 ml all-purpose flour
- 118.29 ml whole wheat flour
- 3.69 ml baking soda
- 78.78 ml creamy peanut butter
- 118.29 ml brown sugar
- 29.58 ml honey
- 1 large egg
- 4.92 ml vanilla extract
- 44.37 ml granulated sugar
- 1.23 ml ground cinnamon
- fresh ground nutmeg
directions
- Preheat oven to 350 degrees Fahrenheit.
- Toast oats until golden, about 10 minutes in the oven on a baking sheet or in a skillet over medium heat for about 7 minutes.
- In medium bowl sift together flour and baking soda.
- In large bowl cream together peanut butter, melted butter, brown sugar, and honey. Mix in egg and vanilla.
- Gradually mix dry ingredients with the wet in the large bowl. Add toasted oats and bran nuggets to dough.
- In a small bowl mix granulated sugar and cinnamon with a fresh grating of nutmeg.
- Form dough into 1 tbsp balls on cookie sheet, about 2 inches apart.
- Flatten cookies with the bottom of a small juice glass dipped in cold water and then the sugar and spice mixture.
- Bake cookies in oven for 8 minutes.
- Enjoy fresh with vanilla almond or rice milk. Yum!

I'm an all around crafty girl and love doing it all myself. Whether it's crocheting myself a cozy cap, building a jewelry organizer, blogging, or cooking a fab meal for friends, I love creating. I don't have a favorite cook book, though I do have favorite TV Chefs, Giada de Laurentiis, Ina Garten, and Jamie Oliver... They all present food in delicious but accessible and simple manners. I appreciate that. In the kitchen I love having fresh herbs, fruits, and vegetables at hand at all times so I can cook whenever the mood strikes me, which is often. I used to bake a lot but now I don't as much which is a shame, maybe one day I'll get back into that.
