Feta Artichoke Dip

"Adapted from a recipe by ad6faith on allrecipes.com. Be sure the artichokes and pimentos are drained really well to keep the dip from being watery. Perfect for parties or holiday dinners. Serve with baguette slices, ciabatta bread, crackers, or veggies (it's a little too thick for the average potato chip)."

  • Preheat oven to 350F (175C). Lightly grease 9x9 inch baking dish.
  • Combine the artichoke hearts, feta, mayonnaise, Parmesan cheese, pimientos, and garlic in a bowl; blend thoroughly. Spoon into prepared baking dish.
  • Bake in preheated oven until top is bubbly and lightly browned, 20 to 25 minutes. Remove and garnish with tomatoes and green onions.

  1. This is absolutely delicious! I forgot the onion as a garnish and didn't have any pimientos, but it was still wonderful!
     
  2. This is a nice change from the classic hot artichoke dip. Feta is the predominate flavor here, but the artichoke is not lost. Pimientos are a nice addition. I didn't grease my baking dish, didn't matter. I used half lite sour cream, half light mayonnaise. I also folded some minced green onion into the dip before baking, and still used the green onion/tomato garnish. Nice recipe, DrG.!

I also earned a Masters in Public Health degree in 2013. After a Walt Disney World trip in Dec 2006 where I had to rent an electric scooter because I couldn't manage the walking, I decided to have gastric bypass surgery, which was done Feb 28, 2007. I lost 160 lbs (though I've gained back about 60 of that since). I can't eat as much as I used to, so I want every bite to be extra good!
