- 2 navel oranges, peeled,quartered,and sliced thin
- 1 small fennel bulb, quartered,cored,and thinly sliced crosswise
- 236.59 ml thinly sliced radishes or 236.59 ml diced peeled jicama
- 59.14 ml coarsley chopped cilantro
- 29.58 ml extra virgin olive oil or 29.58 ml pistachio oil
- 14.79 ml fresh lime juice, plus
- 4.92 ml fresh lime juice
- 1.23 ml salt
- fresh ground pepper
- 88.74 ml shelled salted pistachios, toasted and chopped
directions
- Gently toss all ingredients together (except pistachios).
- Sprinkle with pistachios just before serving.
