I am a mother of 4 kids...ages 3-12....they are all picky eaters so they keep me on my toes. I have a wonderful husband, Eric, hence the name, who is diabetic so I will tend to post things that are ok for diabetic eaters! I am also a full-time college student studying health education with an emphasis on Dietetics. I love nutrition and am always playing around with various flours and grains and different stuff to make a recipe healthier.
