Pancake Mix
- 6 cups all-purpose flour
- 6 tablespoons baking powder
- 6 tablespoons sugar
- 2 cups instant nonfat dry milk powder
- 1 tablespoon salt

Batter
- 1 cup water
- 1 egg, beaten
- 2 tablespoons vegetable oil
directions
- Beat all batter ingredients well with 1 1/2 cups pancake mix and fry in skillet.

I was confused until I figured out that I needed to measure out the dry mix rather than use the entire mix with the batter ingredients ;) Following the instructions correctly, they turned out fluffy, just the way I wanted! I will save this recipe to redeem myself the next time the in-laws are visiting as the last ones I served them was dense and almost chewy :(

My HB and I do not really like pancake, but both my HB and I think it is as good as the ones in the pancake house, if not even better. This recipe is pretty good. I added vanilla extract to my batter.HB thinks it need to be sweeter, since we do not eat syrup. For electronic stove users, like me , use medium +1 or 2 indexs cook it well and fast. each pancake use 2/3 of 1/3 measure cup , round into 8 inch pancake.

I made this on 9/14/12 for my breakfast and for the " Naked Recipe " Event in the Food Photo Forum. Since it was just me, the recipe was reduced in the following way: 2 cups flour, 2 Tblsps. baking powder, 2 Tblsps. sugar, 2/3 cup instant nonfat dry milk, and 1/2 Tblsp. salt. I really didn't need it all the dry mix, so only 1/3 was used. For the batter 1/2 cup water, 1 egg, and 1 Tblsp. oil. After mixing completely, I need to add a bit more water to thin it out a bit.I don't know if it was the way the recipe was reduced or not, but the finished pancakes had no taste and didn't seem to be that fluffy. But, thank you for taking the time to post.

<p>I am married with 2 daughters. I am a preschool teacher and I volunteer in the nursery at my church. My favorite thing is finding new recipes to try out on my family. I host Christmas dinner and try to come up with something new for the table each year. (Keeping all the old favorites, of course!) <br />If I had a month to go anywhere and do anything I wanted...... I would have to say ... find a quiet island, lay in a hammock reading a great book and drinking something refreshing with a little paper umbrella in it.</p>
