Elegant Broccoli

"This is a creamy side dish which is very tasty. It is a different way to serve broccoli."

ingredients

• 3 cups water
• 1⁄4 cup butter, plus
• 6 tablespoons butter (divided)
• 2 (6 ounce) packages corn bread stuffing mix
• 2 (10 ounce) packages frozen broccoli spears (cooked and drained)
• 2 tablespoons flour
• 1⁄2 teaspoon chicken bouillon granule
• 1⁄4 teaspoon salt
• 1 1⁄3 cups milk
• 1 (3 ounce) package cream cheese (softened and cubed)
• 2 green onions (scallions, sliced)
• 1⁄2 cup shredded cheddar cheese
• 1⁄8 teaspoon paprika

directions

1. In a saucepan over medium heat, combine the water and 1/4 cup butter; bring to a boil.
2. Remove from heat and add the stuffing mix and toss; let stand for 15 minutes.
3. Spoon stuffing around edges of a greased 9 x 13 casserole baking dish.
4. Place broccoli spears in the middle of the dish.
5. In a saucepan over medium heat, melt remaining butter.
6. Add flour, bouillon, and salt; stir to form a smooth paste.
7. Gradually add milk, stirring constantly till thickened.
8. Add cream cheese; stir till melted.
9. Add onions and mix well.
10. Pour over center of broccoli.
11. Cover and bake at 350 degrees for 20-25 minutes.
12. Sprinkle with cheese and paprika.

Here is a great side dish for anytime, but especially good for Thanksgiving. Here is another way broccoli can be added to your table with ease of preparation and with great results! We loved it!
