Eggplant (Aubergine) Parmesan

- 1 beaten egg
- 1⁄4 cup skim milk
- 1⁄8 teaspoon pepper
- 1 cup crushed saltine crackers (28 crackers)
- 1⁄4 cup grated parmesan cheese
- 2 tablespoons dried parsley flakes
- 1 medium eggplant, sliced 1/4 inch thick (1 lb total)
- nonstick cooking spray
- 1 (15 ounce) can tomato sauce
- 1⁄2 teaspoon dried oregano, crushed
- 1 garlic clove, minced
- 3⁄4 cup shredded part-skim mozzarella cheese (3 oz)
directions
- In a small bowl combine egg, milk and pepper.
- In another bowl stir together cracker crumbs, parmesan cheese and dried parsley flakes.
- Dip eggplant slices in the milk mixture to coat, then dip both sides in the cracker mixture.
- Lightly coat a 2 quart rectangular baking dish with cooking spray.
- Arrange eggplant in dish.
- In a bowl stir together tomato sauce, oregano and garlic; pour over eggplant.
- Bake covered at 350 F for 40 minutes or until eggplant is tender.
- Sprinkle with mozzarella cheese.
- Bake uncovered for 10 more minutes.

What a great recipe! I'm so tired of the special treatment eggplant needs, the salting, the draining, the grilling! This is simple, with simple, on hand ingredients, easy and fairly quick to put together. I used diced tomatos in a box plus tomato sauce, extra cheese, needed extra crackers probably because I can only get small eggplants in this country so I had a lot more slices. It was better than the eggplant parmesan I'm served in most restaurants. I'll use this for potlucks as well as becoming a family favorite. Thanks!!!

Me and my boyfriend have been together for 11 years now. We live on 40 acres and have 6 dogs and 4 Tennessee Walkers. We both work a lot of hours so there is never enough time in a day to get everything done. I absolutely love the outdoors. I also enjoy lifting weights, reading and playing with all of my beautiful animals. I absolutely love, love and love to cook. I like to cook a variety of things and also like love to bake. I like to just get in the kitchen and experiment with different things. If something does not turn out for me such as pie crust or gravy I will keep trying until I can make it work. Only problem is, when I finally make it work it may not work again the time after that. It is fun though and I do consider myself a pretty good cook for the most part. I also love slow cooker recipes. Those are my most favorite in the winter months.
