Eggnog Martini

- 1 cup sugar
- 1⁄4 cup cornstarch
- 1 teaspoon freshly grated nutmeg
- 1 teaspoon pumpkin pie spice, plus more for garnish
- 8 cups whole milk, divided
- 6 large egg yolks
- 3 cups brandy
directions
- Place a mesh strainer in a large non-glass bowl set in an ice water bath. Set aside.
- In a medium saucepan, off heat, stir together sugar, cornstarch and spices. Whisk in 4 cups cold milk, being sure to dissolve cornstarch. Whisk in egg yolks.
- Over medium heat, whisk constantly until large bubbles start to form, 10-12 minutes. Reduce heat to low and cook 1 minute more, still whisking constantly.
- Remove from heat and pour through sieve into bowl. Whisk in remaining cold milk. Allow to remain in ice bath until fully cold.
- Stir in brandy just before serving. Serve in martini glasses garnished with a pinch of pumpkin pie spice.
