Easy Rice Salsa Salad

"This is an easy recipe I came up with when I ran out of salad dressing at home."

ingredients

• 3 tablespoons cooked rice
• 1 tablespoon salsa
• 2 cups lettuce (shredded or from those ready to use salad bags)

directions

1. Mix all ingredients together and enjoy!

I used brown rice and 2 cups of lettuce seemed like a lot so I just added fresh lettuce until it look about right. I'm rating this 3.5 stars because of how easy and filling it was. Nice for a quick lunch or side. Made for Pick-a-chef Fall '07
