ingredients
- 2 tablespoons canola oil
- 1⁄2 red bell pepper, chopped
- 4 minced garlic cloves
- 2 ounces vodka
- 1 teaspoon cayenne pepper
- 1 1⁄2 cups cream
- 1 cup spinach leaves, no stems
- 2⁄3 cup mushroom, chopped
- 1⁄2 cup parmesan cheese, grated
directions
- Heat 2 T oil in a sauce pan.
- Add chopped garlic and bell pepper.
- Heat until pepper begins to soften.
- Add Vodka.
- Bring to a soft boil.
- Add Cream.
- Add cayenne pepper
- Bring to a soft boil.
- Add spinach and Mushrooms.
- Cook until spinach wilts.
- Add parmesan Cheese.
- *I served this over a chicken breast I cooked with my George Foreman Grill.
- **If you like spinach, you may want to put even more in the pan.
