Easy Fast Yummy Broccoli & Corn Casserole

This is VERY easy and the ingredients can be kept on hand. I make this when I have to bring a dish somewhere and don't have time to run to the store, or for last minute company. This was my mother-in-laws recipe from the 1970's, not sure where she got it. Simple but so tasty!

I've had this in my cookbook for a long time. Seen it offered for PAC and snatched it up. I made exactly as written and we all enjoyed this. Made for Spring PAC 2010.

Ingredients Nutrition

  • 1 (14 3/4 ounce) can whole kernel corn, drain
  • 1 (14 3/4 ounce) can creamed corn
  • 1 (10 ounce) box frozen chopped broccoli (break up)
  • 2 12 cups crackers, 'Chicken in a Biskit' by Nabisco, coarsely crushed
  • 12 cup unsalted butter, melted
  • salt and pepper


  1. Mix corn, creamed corn, frozen broccoli, 1 cup of crushed crackers, and salt and pepper in a small casserole dish.
  2. Spread the remaining crackers on top.
  3. Pour the melted butter evenly over the crackers.
  4. Bake uncovered at 350°F for 30 minutes.
  5. Baking longer than 30 minutes may burn the crackers so watch carefully at the end.
