ingredients
- 1 lb ground beef
- 2 tablespoons finely chopped sweet onions
- 2 tablespoons finely chopped green peppers
- 1⁄2 cup barbecue sauce
- 1 teaspoon brown sugar
- 1 teaspoon dry mustard
- 1⁄4 teaspoon salt
- 1 tablespoon minced garlic
- 10 ounces refrigerated buttermilk biscuits
- 1⁄2 cup grated cheese
directions
- In large skillet over medium hear, brown ground bee, onion and green pepper; drain. Stir in barbecue sauce, brown sugar, mustard, garlic and salt. Cook for 5 minutes over low heat, stirring often.
- Heat overn to 375°F Blace biscuits into ungreased muffin cups. Press and mold each biscuit in center to cover bottom and sides of muffin cup. Place 1/4 cup barbecue mixture into each cup. Sprinkle with cheese. Bake at 375°F for 10 - 15 minutes or until golden brown. Cool 5 minutes, remove from muffin cups.

WOW! These are not only fast and easy, but are delicious too! The only change I made to this recipe is I used red bell pepper instead of a green one. When I looked in the oven I blurted out OH MY as they really puffed up but they stayed on the pan and didn't overflow making a mess in the oven. You might want to put a pan under it just incase. Made for Spring 2014 PAC.
