I'm amazed with how nice these muffins came out. Right sweetness, soft but keeps it shape. It also rose beautifully.Yes! :) I probably used bigger muffin molders as I was only able to make 8. DH asked why I only made a few. I also opted out on the nuts. From now, on if ever I make these EASY yet DELICIOUS muffins, I'll double the recipe! I'll also make this as a base for other flavored muffins like put chips in it and blueberries. Perfect! Thanks for sharing, Sam #3! I'm so glad I found a keeper! Made for PRMR.

At first I was expecting my review to say that they were good, but nothing like doughnuts... but I was pleasantly surprised that the texture was like a doughnut. I used a fork and mixed until just combined, because muffins can be temperamental to over mixing. I cut the recipe in half and used cinnamon in the batter instead of nutmeg. I got six very dense doughnut like muffins. I used cheap muffin liners... and the bottoms stuck really badly, hence no picture.... so next time I'll grease the pan and hope for the best, but all in all a good recipe, and very quick too. Also open for lots of variations I'd say.
