Dilo's Chicken Corn Chowder

"took me a long time to perfect this, but now that I feel it can't get any better (and the family feels the same). It's definitely a family favorite and requested when people come to visit. I started with basic chicken corn chowder and added sweet potatoes one time and loved it. But it still wasn't quite there, then the key was a bit of cinnamon for flavoring. This bides well on a cold rainy or snowy day."

  • in a large pot brown the bacon until crisp (I leave bacon grease for flavoring) and add the chunked chicken. After brown add onions and carrots and allow to simmer and steam for a few minutes. Add potatoes and corn, then enough milk to cover it all usually 3 or 4 cups. Add the cinnamon then salt and pepper to taste. Bring to boil for 5 minutes, turn down to simmer 20 minutes.

  1. This is a delicious soup, however directions regarding the bacon were not clear. I crumbled it on top of each bowl. Also I cooked the chicken, removed the pieces and then cooked the onion and carrots. I par-cooked the potatoes. I used 3/4 cup veggie broth to loosen the fond for more flavor. All Ingredients went into the soup pot with 4 cups milk. The cinnamon was the perfect touch. Thank you DiLo8280!
     
  2. I have eaten this soup and it is absolutely delicious. Great on a cold day.
