  • In a large bowl, combine flour, baking soda, cinnamon, ginger and salt. In another bowl beat eggs, mayonnaise.
  • Gradually beat in flour mixture.
  • Stir in remaining ingredients.
  • Pour into a grease, floured 8 inch square cake pan.
  • Bake 30 to 35 minutes. 350°F.
  • Cool 10 minutes.
  • Remove from Pan.
  • Cool completely.
  • Prepare topping by beating whipped cream til thick. Add vanilla and sweetener. Spread over cake.

  1. I personally did not try this. I also didn't use your topping, but a cream cheese one I found on the net. I made it as a welcome gift for my sisters new roommate as the other one is diabetic. All 3 of them really liked it and so did their caretakers. I used a 9 in. sq. pan and it rose to about 1/2 from the top, so I will continue to use that size. I will check out your other diabetic recipes. Thanks for posting!
