- 2 cups flour
- 2 teaspoons baking soda
- 2 teaspoons cinnamon
- 1⁄2 teaspoon ground ginger
- 1⁄2 teaspoon salt
- 3 eggs
- 1⁄4 cup mayonnaise
- 2 cups carrots, grated
- 1 (8 ounce) can crushed unsweetened pineapple (undrained)
- 1 teaspoon vanilla
- 1⁄2 cup walnuts, chopped
- 1 cup raisins

Topping
- 1 cup whipping cream
- 1 teaspoon vanilla
- 8 teaspoons artificial sweetener
directions
- In a large bowl, combine flour, baking soda, cinnamon, ginger and salt. In another bowl beat eggs, mayonnaise.
- Gradually beat in flour mixture.
- Stir in remaining ingredients.
- Pour into a grease, floured 8 inch square cake pan.
- Bake 30 to 35 minutes. 350°F.
- Cool 10 minutes.
- Remove from Pan.
- Cool completely.
- Prepare topping by beating whipped cream til thick. Add vanilla and sweetener. Spread over cake.

I personally did not try this. I also didn't use your topping, but a cream cheese one I found on the net. I made it as a welcome gift for my sisters new roommate as the other one is diabetic. All 3 of them really liked it and so did their caretakers. I used a 9 in. sq. pan and it rose to about 1/2 from the top, so I will continue to use that size. I will check out your other diabetic recipes. Thanks for posting!
