- 1 1⁄8 kg lamb
- 3 tablespoons water
- 1 teaspoon salt
- 1 teaspoon sugar
- 3 tablespoons vinegar
- 1 tsb mixed herbs
- 1 teaspoon mustard powder
- pepper
directions
- Preheat the oven to 180°C Mix all the baste ingredients together. Score the surface of the leg of lamb in a diamond pattern and spread the baste onto the meat. Cover and chill for at least 2 hours to allow the flavours to penetrate the lamb.
- Place the meat on a rack in a roasting tin with water in the bottom. Allowing 30 minutes for each pound weight of meat, cook, basting frequently for the first 10 minutes and then occastionally until the meat is cooked to your preference.
- Serve with a selection of vegetables.
