Delicious Peach Cake

"An incredibly moist cake with small chunks of peaches throughout."

• Serves: 8

ingredients

• 2 cups flour
• 1⁄2 teaspoon baking soda
• 1⁄2 teaspoon salt
• 1 1⁄2 cups sugar
• 1⁄2 cup butter
• 1 cup buttermilk
• 1 egg
• 1 teaspoon vanilla
• 2 cups peaches, peeled and cut into 1/2 inch cubes
• 1⁄4 cup sugar
• 1⁄2 cup walnuts, chopped
• 1 teaspoon cinnamon

directions

1. Sift dry ingredients together; set aside.
2. In mixer, beat together sugar and butter until creamy. Blend in buttermilk, egg and vanilla.
3. Combine wet and dry ingredients, mixing until just combined.
4. Gently stir in peaches.
5. Pour batter into greased and floured 11 X 7 inch pan.
6. In small bowl, combine nut topping ingredients and sprinkle over the cake.
7. Bake in 350 degree oven for 40 minutes. Cool.

Wow, wonderful recipe. It was quick and easy to make with tremendous results. We loved this delicious cake and will enjoy it often. It will be very easy to vary fruits, nuts and coconut or chocolate in this treat. The crumb is perfection. It took 1 hour and 20 minutes to cook, it was well worth the wait.
