Dairy Blintzes Casserole

"The recipe was posted by Ruth Heiges at http://www.cyber-kitchen.com. She writes: "I got this from a Temple member (Alyse Kirschen) a few years ago. It's fantastic, only dirties 2 bowls, a measuring cup, and measuring spoon. Is much cheaper than blintzes, but tastes just like them. Easy, quick, cheap, delicious..." It can also be adapted for Passover by substituting the flour and baking powder. She´s right. The whole family loves it and it is a keeper... specially for Shavuot and Sukkot."

  • Beat each mixture in a bowl.
  • Pour half of top mixture into greased 9x13 baking dish.
  • Spoon bottom mixture on and top with remaining batter from top.
  • Bake 45-55 minutes at 350 degrees.
  • Serve with fruit.

  1. OMG I can't believe how delicious this was! My kids devoured an entire pan-full. The only thing I did differently was to use ricotta instead of cottage cheese (my grandmother always made her blintzes and kugels with what she called "pot cheese" which I think is the same as "farmer's cheese). This was fabulous. It's a permanent keeper for us! Thanks for psting it, Kerstin!!
